Mushroom Fried Rice

Mushrooms are currently in season. Why not try Mushroom Fried rice? A tasty meal that's great for lunch or dinner.

 100 g Brown rice
 1 tsp Sesame oil
 1 tsp Vegetable oil
 1 tsp Minced or finely chopped garlic
 1 tsp Minced or finely chopped ginger
 160 g Chopped mushrooms
 80 g frozen peas
 1 Chopped spring onion
 1 tbsp Oyster sauce
 ½ tbsp Soy sauce

Prepare rice first as it needs to cool

Firstly, cook the rice according to the pack instructions. Once it is cooked rinse with cold water and drain well. To cool the rice quickly, spread in a flat layer on a baking tray.

Prepare vegetables

Meanwhile, slice mushrooms and spring onions and set them aside. Take peas out of the freezer to defrost for use later.
In a non-stick frying pan heat the vegetable oil on a medium heat. Then add the mushrooms and season with pepper. Fry till they are golden then transfer to a plate till later.

Start cooking and mix continuously

Next, in a non-stick frying pan or wok heat up 1 tsp of sesame oil to a high heat.
Add minced garlic and ginger and mix.
Whilst stirring, add the mushrooms, spring onion and oyster sauce.
Put the rice in the pan. Pour in the soy sauce and continue to mix well ensuring that the rice is coated in the sauce.
Finally, add the peas and mix. Once food is cooked remove the food from the heat and transfer to a serving dish.

Serving time

Serve immediately with crispy aubergines.
