A lunch time meal high in Calcium and containing Vitamin D which helps to build strong bones.
Using a fork mash up sardines (including bones). Add finely chopped chilli, onion and tomato puree. Mix together.
Place two tortillas on a flat surface. On each tortillas spread half the mayonnaise, half the sardines, half the mango pickle, half the cheese and top chopped bok choi leaves. Fold the tortilla in half and press down gently.
Put frying pan on low/medium heat. Spray with oil. Once pan has heated up place tortillas in pan. Cook for 2-3 minutes each side till tortilla is crispy.
Remove from pan and slice in half.
Serve with a crispy green salad.
